Tracy’s Tomato Onion Salad Dressing

Ingredients:
1 lg. heirloom tomato or 2-3 roma tomatoes (any tomato of your choice will work fine)
1 lg. sweet onion
balsamic vinegar
olive oil
salt & fresh ground pepper

Directions:
Slice tomato and onion thinly (don’t dice) and layer in a wide, shallow bowl or container. Drizzle with olive oil, balsamic vinegar and sprinkle with salt and fresh ground pepper. (I like to use fresh ground sea salt, but regular table salt is fine also.) Do not stir initially.

Allow to sit and marinate on counter-top at room temperature for at least an hour, stir with tongs several times after the first 15-20 minutes. Top any green salad with this “dressing”. You’ll notice juices in the bottom of the bowl. Save this in a container in the fridge. It’s delicious as a dressing all on it’s own. It’s BETTER, though, if there is a little tomato and onion leftover. Place all in a food processor and blend until thick and creamy. YUMMY!
